I enjoy the variety in creating something new! I realize that for some bakers, their goal is to have a consistent and predictable menu, where customers can make orders from an established set of goodies. For me, one of the joys of baking cakes is that each one is a completely different combination of designs and flavors. I enjoy the process! Art takes time—the ideas roll around in a jumble at first, then they all start to take a form.
